Winemaking

15 days of cold prefermentary maceration. All the blend matures in oak barrels.

Tasting

Ruby with purple reflection. Nose is frank and intense. Large domination of jammy red fruits (Raspberry and cherry) with some cocoa note. Once swirling, these notes are increased and wine lets appears complex floral and animal aromas. This wine can be aged easily (8-9 years). Palate starts with a creamy and generous mousse. In mouth, we found kirsh, mature strawberry and chocolate aromas. Tannis are not too astringeant and can melt with some years of bottle ageing. Long and persistent finish.

Food pairing

Irish stew / Lamb fillet with thyme / Tajine.
